Garlic Parmesan Chicken, Potatoes and Spinach

garlic-parmesan-chicken-feature

I’ve been so busy this summer with my farmers market job, that my ‘fanciest’ dinners have consisted of tacos and maybe a pasta salad once in awhile.  Not that my kids have minded eating sandwiches often. Ha. However, I was really craving something …. better. I’ve made this once before and it was delicious, and it consists of ingredients that I often have on hand.  Also a plus when you’re busy!  I used boneless, skinless chicken thighs, whatever kind of potato I had on hand (this time it was yukon gold, but baby reds would be great too!), and frozen […]

Lemon Cupcakes with Raspberry Buttercream

lemon-raspberry-cupcake-feature

Feels like summer in your mouth! I have to admit something. I can easily get stuck in a rut. I make the same rotation of dinners, especially if I’m really busy. I make the same cake for birthdays. So, part of my reason for starting a blog is to have a really good reason to branch out and try new things!  So, here I am – trying new things.  I was talking to a friend who makes cakes for a living and I was surprised to find out that more people order non-chocolate cakes than chocolate!  If chocolate is an […]

Flourless Chocolate Cake (Gluten free)

flourless-chocolate-cake-feature

Rich, decadent chocolate. And so very easy. This is definitely something for chocolate lovers!  It’s a little deceiving calling it a “cake” though, because it is not a light fluffy dessert.  It is rich and dense and full of chocolatey goodness! With such a rich dessert, it’s nice to serve it with some berries and whipped cream to balance the dense chocolate.  It’s really like eating a cake made out of fudge! This chocolate cake is flourless, and although we don’t eat gluten free in our house (yet anyway), we obviously know so many people that do.  When I know […]

How to Make a Parchment Circle

parchment-circle-feature

Easy tutorial for a paper circle! Here in my Kitchen Tips section I’m going to share things that I know I’ve had to look up over the years and can’t seem to remember.  Like an easy way to cut a circle of parchment paper to fit a pan.  I’ve passed on recipes before when I’ve read, “Place a circle of parchment in the pan…” Ugh, one more step – and is it even necessary?  Don’t laugh – I can’t be the only one!  But when I was researching recipes for my recent Flourless Chocolate Cake, it seemed worth it to […]

Coconut Shrimp

coconut-shrimp-feature

Easy homemade coconut shrimp! We rarely go out to eat any more, yet there are a few things things that I crave once in awhile.  Coconut shrimp tops the list.  Yum!  Now, I’ve always been a huge seafood fan, but I honestly just don’t love coconut.  However, there are a few coconut dishes I’ve tried that are the exception and coconut shrimp is one of them.  My husband and I made some of these one night after the kids went to bed.  There’s no need to share everything yummy with your kids!  Haha. The recipe I found called for raw […]

Homemade Snickers Bars

snickers-feature

Sometimes you need your kids to think you’re magic! I had really no good reason to make these homemade Snickers bars.  I’m mean, really, no one needs to know how to make them.  And when I said I wanted to branch out and try new recipes, I really did mean dinner recipes.  But sometimes you need to make things just for fun and now my kids think I’m magic because “My mom can make candy bars!” With the Super Bowl coming up in a couple days, this would be a fun treat if you’re going to a party or entertaining […]

Cloud Bread

cloud-bread-feature

Gluten free and carb free…bread! Anyone eating low carb or gluten free is going to love this! Cloud Bread is one of those very exciting and oh so easy recipes out there that really is a great substitute for good old fashioned bread. If you’re on Pinterest, you’ve probably stumbled across this one. I had pinned a recipe for Cloud Bread a long time ago and just didn’t get around to trying it. I have no idea why, but I’m sure it had something to do with how “hard” it is to take my Kitchen Aid out of the cabinet […]

White Chocolate Peanut Butter Fudge

peanut-butter-fudge-feature

Melt in your mouth peanut butter fudge. Fudge. There are just some things you need to have in your life.  This white chocolate peanut butter fudge is one of them.  I stumbled upon this recipe a few years ago when making mini desserts for my sister-in-law’s bridal shower. I had never made it, but it involved peanut butter and white chocolate… yum.  My niece had asked if she could help with the desserts and I asked if she’d bring this one.  When she arrived with the fudge, she said, “You have to see how heavy this pan is!”  We laughed […]

Eggroll in a Bowl – and an idea for leftovers!

eggroll-in-a-bowl-yumbiance-feature

A super fast meal for those crazy busy days! Eggroll in a Bowl – doesn’t that sound fun?  I love eggrolls and I love fast and easy dinner ideas, so I couldn’t wait to try it.  I didn’t know what I was doing the first time I made it, and I was standing in the meat section at the grocery store trying to figure out if I was supposed to buy pork sausage or ground pork. I don’t buy either very often so I guessed.  I tried ground pork and thought it was a little bland, although my husband said […]

Eggs, Spinach and Ricotta on Toast

egg-spinach-ricotta-feature

A yummy twist on eggs and toast in the morning. I love breakfast.  I love pretty much all “breakfast foods” too.  Unfortunately, not all of them are very healthy.  I eat a lot of eggs and sometimes it’s nice to have a little change from the standard eggs and toast.  I actually don’t eat much bread these days either, but a thin slice once in awhile is tasty.  I came across this recipe and it caught my eye because I don’t normally think to spread ricotta cheese on my toast.  I think I’ve only ever bought it for Italian dinners.  […]
