Eggs, Spinach and Ricotta on Toast

A yummy twist on eggs and toast in the morning. I love breakfast.  I love pretty much all “breakfast foods” too.  Unfortunately, not all of them are very healthy.  I eat a lot of eggs and sometimes it’s nice to have a little change from the standard eggs and toast.  I actually don’t eat much bread these days either, but a thin slice once in awhile is tasty.  I came across this recipe and it caught my eye because I don’t normally think to spread ricotta cheese on my toast.  I think I’ve only ever bought it for Italian dinners.  […]

Breakfast Casserole – “Egg Bake”

This Egg Bake is a great way to feed a crowd for breakfast! Breakfast.  It happens every day.  My little boys wake up at 6:00am and the first thing out of their mouths is, “Mommy, I hunnngry.”  So making breakfast is a half-awake event for me most days because you know with little ones… they have a ticking time bomb inside them that goes off if not fed asap.  I love easy breakfasts, and also ones that can be reheated.  Breakfast in 30 seconds kids!  Thankfully most of my boys like this breakfast casserole, which they call “Egg Bake”.  It […]

Pumpkin Bread Muffins – Not Just for Fall!

Your house is going to smell fabulous when these are baking! I know it’s not fall.  I just love pumpkin anything way too much, so I make my favorites all year long.  I love, love, love pumpkin bread.  Just everything about it is so yummy.  The house smells fabulous when it’s baking. Everything feels cozy.  What I have never loved is how long pumpkin bread takes in the oven. It’s at least an hour and it always feels like the middle is never going to get done, while the edges seem a bit too done.  I’ve made half sized loaves […]

Sour Cream Banana Bread

A wonderfully moist banana bread everyone loves. This right here is the only reason for bananas in my opinion. Don’t tell my kids that. Ha.  I was never even a fan of banana bread until after I got married. My husband told me it was one of his favorites…so I was on a quest to find a good recipe. Most of the banana bread I had tried up until then was too dry for my taste. My friend Marianne gave me this recipe and it makes the absolute best banana bread I’ve ever had.  The sour cream really does make […]

Secret Ingredient Oven Pancake!

Delicious and fancy enough for guests, but easy enough for any day! This oven pancake is a family favorite around here, and also another recipe from my mom!  Isn’t it funny how as a kid you assume that everyone eats the same things you do? My mom would always ask us what we had to eat when we went to a friend’s house.  Keep in mind this was looooong before the internet where you can now see what other people are eating!  Many people have had some variation of an oven pancake….German Oven Pancake (Dutch Baby), Finnish Oven Pancake (Pannukakku […]

Steamed Hard Boiled Eggs – With a Secret Ingredient!

A foolproof way of hard boiling eggs!  With a delicious way to eat them! Hard boiling eggs is something that I always had to look up to see exactly how to do it right.  How many minutes? Do I use cold water? How long do I boil it? Do I turn the heat off or keep it on? And then, there have been the times when I’m waiting for the water to boil and forget all about it…now who knows how long they’ve been boiling??  Frustrating.  If you have never tried steaming your eggs to hard boil them, you are […]

Blueberry Scones with Lemon Glaze

A tender, flaky and delicious breakfast treat. Scones have always sounded so daunting. So fancy, so … British.  I honestly had never tried making them until very recently. It’s almost embarrassing to admit, since I’ve been baking for decades.  Muffins – no big deal.  But scones just sounded harder. Maybe I’m alone in this thought. Anyway, if you’ve never tried making scones, I’m here to tell you that you can do it.  It really wasn’t any harder than muffins!  I’m serious.  Yes, I had a nice sticky mess going on the first time, but they still turned out great! No […]
