I know, you’ve heard it before. “Easiest Chicken Ever”. Is it actually easy for anyone? Yes, yes it is. Anyone can make this and it’s practically foolproof. (I’m saying “practically foolproof” because we all have that friend who can’t even boil water…) Ha. You sprinkle this magic seasoning on it and put it in the oven. That’s all. I’m not kidding. And it is some of the best tasting chicken I’ve ever had. My husband even loves this and he’s not one to gush over just any chicken recipe. He didn’t believe me when I told him it was just one step. He kept asking how it got all crispy on the top and tender on the inside. I told him, it really is magic.
The “magic seasoning” is called Spike. Spike seasoning has been a staple in our house for years! I usually buy 2 at a time so I’m guaranteed to not run out. See, I really do have two in my pantry!
I’m sounding a little obsessed over a seasoning, but honestly it’s just so good.
Here’s how easy it is. Preheat your oven to 350 degrees. Place the chicken on a roasting pan (if you’re smarter than me you’ll probably line the pan with parchment paper so it’s easier to clean up). Chicken thighs – bone in, skin on- are my favorite for this. And a bonus is that they’re usually very inexpensive too.
Sprinkle Spike seasoning generously over the chicken. Place in the oven for one hour.
That’s all. Really, that’s all.
Sprinkling is really the only step. Everyone can sprinkle! You are going to feel like a cooking rockstar and impress your family and friends with hardly any effort at all.
This chicken will be fall-off-the-bone delicious after baking for an hour. I’ve let it go a little longer before and it doesn’t get dry. The first time I made this chicken I took it out when it reached 165 degrees (safe eating temperature for chicken), and it just wasn’t very good. I was afraid of overcooking it, but this chicken is best after an hour – it’ll be 180 degrees or so. It made the difference between so-so chicken and extremely yummy chicken!
My kids even like this chicken. I get “thumbs up” all around every time I make it. Super easy one-step chicken dinner plus no one complaining equals success in my house! And I’d suggest making a large pan so you can have leftovers. I love adding the leftover chicken to my Apple Cranberry Coleslaw for lunch the next day! Yum.
